This Garlic Chicken With Green Beans and Tomatoes is a super simple and delicious dinner that you can have on the table in only 30 minutes!
Tender pieces of chicken cooked with lots of garlic and tossed with crisp-tender green beans and juicy, sweet cherry tomatoes…doesn’t that sound tasty? Heck, yeah! And guess what? It’s low in calories too!
I’ve talked a bunch about how I love comfort foods, especially at this time of the year. But I also love eating light too, and it definitely doesn’t have to be boring and tasteless.
This Garlic Chicken With Green Beans and Tomatoes is proof of that. It’s got tons of flavor, and it’s less than 300 calories per serving. You could even have seconds or sprinkle it with a little Parmesan cheese and not feel guilty!
So, this year, in addition to a garden, we experimented with having a tiny little greenhouse and doing some hydroponic growing. David built everything himself using wood and supplies that we already had lying around, and it turned out awesome!
The plants in the greenhouse actually did much better than anything we tried to grow in the garden (moles and slugs, I’m looking at you…grrr!), and it extended the growing season.
I actually picked the last of some green beans and tomatoes just a few days ago. I wanted to use them quickly, and I was in the mood for some garlic chicken, so we decided to put them all together. It turned out to be a winning combination that I couldn’t wait to share!

- Chicken tenderloins (or boneless, skinless chicken breasts)

- Cherry or grape tomatoes
- Salt and pepper
- Parmesan cheese (optional)

Tips & Tidbits:
- The better the quality of your ingredients, the better this dish will be. Get green beans and tomatoes that are super fresh!
- You can keep the beans whole or cut them. I like cutting them into pieces about 2 inches long to make them more manageable.
- You can use frozen green beans if you’d like. The texture of the beans will just be a little different (softer versus the more crisp-tender fresh beans).
- Be careful not to overcook the chicken. You want it tender and juicy, not dried out. For this recipe, I use moderate heat and don’t go for browned chicken.
- We LOVE garlic, so I use 4 medium-sized cloves, which I think is perfect, but feel free to adjust that amount to suit your own personal tastes (especially since the size of garlic cloves can vary).
- Keep an eye on the heat after you add the garlic. Lower it if you need to to make sure the garlic doesn’t burn. Burnt garlic does not taste good.
- This dish is at its best when served immediately.
For an extra burst of flavor, I just lightly sprinkle mine with grated Parmesan cheese. Yum!
This dish is great all on its own, but it also pairs nicely with a salad, baked potatoes, roasted potatoes, or rice pilaf.

Garlic Chicken With Green Beans and Tomatoes
Ingredients
- 4 cups cut fresh green beans, about 2-inch pieces
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1½ pounds chicken tenderloins, cut into bite-sized pieces (or boneless, skinless chicken breasts)
- 4 cloves garlic, finely minced, add less or more to taste
- 2 cups halved cherry or grape tomatoes
- salt and pepper, to taste
- grated Parmesan cheese, optional
Instructions
- Steam the green beans until crisp-tender (or until they reach your desired level of doneness).
- In a large skillet, heat the olive oil and butter over medium heat. Add the chicken, season with salt and pepper, and sauté, stirring frequently, until the chicken is cooked through and no longer pink (we're not going for browned chicken in this recipe; be careful not to overcook the chicken so it is not dry).
- Add the garlic and sauté for another 1 to 2 minutes, stirring frequently. Note: keep an eye on the heat and lower it, if necessary, to make sure that the garlic doesn't burn.
- Add the steamed green beans; sauté, stirring frequently, for another minute.
- Turn off the heat and add the tomatoes; stir to combine. Taste and add salt and pepper, if needed.
- Best when served immediately. Sprinkle each serving with grated Parmesan cheese, if desired.
