It’s zucchini time! And whether you’ve got an overload of zucchini in your garden (like me!), were gifted some by generous neighbors, or you bought a bunch from your local farmer’s market, all of these recipes are great ways to enjoy them!
And don’t get me wrong. I’m not saying that there’s anything wrong with zucchini bread. I love it. In fact, I’ll be posting my favorite zucchini bread recipe coming up next, so stay tuned!
But sometimes you just want something different. Zucchini are very versatile, and there’s so many other things you can make with them.

And don’t forget that another fabulous way to use zucchini is to turn them into “zoodles” (zucchini noodles) and use them as a low-carb replacement for pasta.
All you need is a spiralizer to cut the zucchini. Then boil or sauté them just until crisp-tender, season them to your liking, and enjoy!
