This quick and easy Homemade Poultry Seasoning is the perfect blend of herbs and spices to use in all your favorite chicken and turkey recipes. Plus, it’s also awesome in stuffing!

You may already have everything you need to save yourself some time and money by making your very own homemade poultry seasoning!
I have to laugh every time I make a batch of this poultry seasoning because I inevitably get Simon & Garfunkel’s Scarborough Fair stuck on repeat in my head for a while after making it. You know…parsley, sage, rosemary and thyme!
Yep, those are the main herbs that I use, plus two spices: nutmeg and black pepper. It’s that simple!
INGREDIENTS YOU NEED:
- Dried parsley
- Dried sage (rubbed or ground)
- Dried rosemary leaves
- Dried thyme
- Nutmeg
- Black pepper
Many poultry seasoning recipes call for marjoram (a spice similar to oregano). You could use dried marjoram in place of the parsley (or you could add some in addition to the parsley). Marjoram is an herb I never ever use, so it’s not in my spice drawer, and so I use parsley instead.
Why not oregano? I think the flavor is too strong and doesn’t really fit here.
I like to crush the rosemary leaves a bit with my fingers so the pieces are not so large. Totally optional.
Just mix everything together in a small bowl, and you’ve got yourself some poultry seasoning!
If you’d rather your poultry seasoning with less bits and pieces in it (more like a powder), just put it in a spice grinder (or you could use a mortar and pestle and some good old-fashioned elbow grease).
This recipe makes about 4 tablespoons (12 teaspoons). I actually don’t use a ton of poultry seasoning throughout the year, so this is the perfect amount to last me for a while. The recipe can easily be scaled up or down depending on how much you need or want to make.
Store your poultry seasoning in an airtight jar or other container and store away from light and heat. It should last you for many, many months (assuming you have started with relatively fresh herbs and spices!).

Homemade Poultry Seasoning
Ingredients
- 2 teaspoons dried parsley flakes
- 4 teaspoons dried rubbed or ground sage
- 1½ teaspoons dried rosemary leaves, crush with fingers into smaller pieces if desired
- 3 teaspoons dried thyme leaves
- 1 teaspoon nutmeg
- 1 teaspoon black pepper
